Extra virgin olive oil from the Iblei Mountains in Sicily
"Frantoi Covato" are located in the Iblean Mountains in San Giacomo, a hamlet of Ragusa, in the Southeast of Sicily. Since 1985, they have been producing high-quality extra virgin olive oil, obtained from typical centuries-old olive groves "protected" by the notorious dry stone walls of the Iblean Mountains, which were built in the past to delineate the plots of the plateaus.

From harvest to bottling, our extra virgin olive oil embodies freshness and quality at every step.
Olive harvesting
In the process of producing extra virgin olive oil, the olive harvesting is a crucial phase, and our preferred method is hand picking, known as "Brucatura" in Italian.
Extraction of oil
Following the harvest, the olives reach our olive mill, where they are washed and crushed. The obtained result then proceeds to the phase of crushing.
Preservation of the oil
During this resting phase, impurities settle at the bottom of the container, allowing the oil to naturally reveal its clarity.
Bottling
The extra virgin olive oil destined for sale is carefully packaged in sealed containers, accompanied by appropriate labels, with a capacity not exceeding 5 liters.
